If you're talking about using different themes based on user within a single WP install, I don't think it's possible. MU might be the way to go, but I know nothing about it. For a non-MU solution, the first place I'd check is the plugin directory (http://wordpress.org/extend/plugins/), and I would also ask the question in the wordpress support forums (http://wordpress.org/support/) as you'll find a lot more WP experts there than here. They might also be able to answer your questions on MU. I'm already doing almost exactly what you said about creating category pages, but my blog isn't intended to be a collection of blogs.. it's supposed to be one blog written by many people, hence the user-specific categories that all look the same as the rest of my site.
