Leftover Colombian style Chicken – What to do with it tonight?

I have a whole chicken cut up from a Colombian restaurant near our house (we had a bunch of ppl over and got chicken and rice) – so now, i have chicken that is cooked (skin on) Latin style and want to make something out of it tonight for dinner but I don't want to do chicken and rice again. Any ideas?

    There are many simple things you can do with that chicken.
    1) Cut it up into strips and place on a salad with basic salad ingredients: lettuce. Garnish with vinagrette dressing.
    2) Serve in noodles, adding some cherry tomatoes sliced in half.
    3) Take the skin off. Mix frozen veggies (any kind!), 5 tablespoons soy sauce, 3 tablespoons peanut butter, and 2 cups orange juice in a bowl with the chicken. If you have time, place on a crockpot until you are ready to eat. Serve over rice.
